Kansas Turkey Red Wheat: Crimea, Ukraine: is a hard red winter wheat with a rich, nutty flavor from landraces that survive harsh Ukrainian winters. Turkey Red was bought from Ukraine by Mennonites who migrated to Kansas in 1873.

turke Red was the hardiest wheat and soon became the favored Kansas wheat until modern breeding created shorter, highte-yielding varieties. A researcher who went to Ukrain in 1898 to collect wheat would comment on the Turkey Red “We had forgotten how poor our bread ws at the time of the trip to Ukraine. In truth, we were eating an almost tasteless product, ignorant of the fact that most of Europe had a better flavored bread with far higher nutritve qualities”

The - good breads, baked by artisans today owe some of the flavors and nutrition of the bread to the Ukrainian wheat stock which is at the base of U.S. wheat today
